Bits & Bobs We ♥: Thanksgiving Leftovers

I didn’t feel that I could properly put Thanksgiving to rest without letting you know what I decided for my turkey!  You may remember from last week that I was thinking of the various brine methods that Food Network had offered up in their latest mag and after a bit more research (see I can’t let the topic rest) I ended up going with the 3,500+ positive rankings on Alton Brown’s Good Eats Roast Turkey.  It was perfect (if I do say so myself)!  Not a comment about being too salty (like last year) or too dry (like my first year hosting) but just that it was nice and moist and cooked much quicker than any of us had intended.

Did I mention that I went to retrieve my 16-20 pound lady luck turkey at the local grocery store and they were OUT….so I only had the choice of a 14 lb or 30 lb-er.  Oh yeah…I went for the 30 pounder!  What I didn’t realize until I got home, was that I had no idea how close we were to NOT being able to fit her in my newly purchased 5 gallon painters bucket (this is where we let the brine rest overnight) from the hardware store.  Thanks to a helpful BIL who put his knee down and squeezed her in!

So, back to the bits & bobs that I ♥…..leftovers!  I didn’t totally gorge myself in eating dinner Thursday night so I woke up Friday excited about leftovers!  I literally could have fixed a plate for myself at 8am had the men in my house not given me such a weird look!

Here are a couple of my favorite leftovers, besides the traditional 2nd round of filling my plate!

1.  Pie for breakfast!  (See….even Design Mom goes for it!)

2.  Turkey Noodle Soup

3.  My personal family favorite recipe we call “Turkey Broccoli” casserole!  (Similar recipe is Turkey/Chicken Divan but ours is much easier)

My current quest is to find out what to do with all the leftover stuffing! We have it coming out our ears.  There’s the FN Stuffing Frittata or Fried Stuffing Bites with Cranberry Pesto Sauce hmmm….sounds interesting.

Turkey Broccoli Recipe (As Mom and I prepare it)

1-2 cups cut up turkey bits

1/2 cup mayo

1 10 oz can of cream of mushroom/or chicken

Lots of broccoli

1 cup shredded cheese

Salt & Pepper

Throw it all in a casserole dish and bake for about 30 minutes!  A friend of ours puts hers over rice and that’s good too!

What’s your favorite leftover item?  Is it the pie or do you go straight back for a warm turkey sandwich?  Who am I kidding…you go back for both!
