In the Kitchen: Lemon Glaze Cookies

My MIL made wonderful cookies this last weekend and my Mom and I literally woke the next day dreaming of them.  We immediately went to find the recipe because they are a sure winner in cookie world!  Mummy-in-Law found the recipe in this months Everyday Food and luckily this is one of the few apps that I’ve purchased for my phone so I found it pretty easily.  I’m pretty sure I’ve dreamed of these cookies everyday since Saturday night, so yesterday my lil Pip and I made them.   The cookies taste fresh, light and oh so refreshing!  It’s hard to eat just one!

I wished I had photographed MIL’s version because her glaze was much more picturesque than mine but they still taste good.  Also, one note of difference from the recipe, I had one mysteriously disappearing lemon which reappeared only during the glaze phase.  Therefore, the cookie recipe calls for lemon juice, which I had in the fridge but no lemon zest…I used orange zest instead and love that you can see the orange flakes in the cookies and glaze!  Next time (which will be soon) I’ll try with lemon zest throughout!

Lemon Glaze Cookies Recipe, makes 24 cookies

  • 2 cups all-purpose flour, (spooned and leveled)
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 tablespoon finely grated lemon zest, plus 2 tablespoons fresh lemon juice
  • 1/2 cup (1 stick) unsalted butter, room temperature
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon pure vanilla extract
  1. Preheat oven to 350 degrees. In a medium bowl, whisk together flour, baking soda, salt, and lemon zest. In a large bowl, using an electric mixer, beat butter and granulated sugar until light and fluffy. Add egg, vanilla, and lemon juice and beat until combined. With mixer on low, beat in flour mixture.
  2. Drop dough by heaping tablespoons, 1 inch apart, onto two baking sheets. Bake until edges are golden, 15 to 20 minutes, rotating sheets halfway through. Let cool 2 minutes on sheets, then transfer cookies to a wire rack to cool completely.  Make Lemon Glaze recipe below:

Lemon Glaze

  • 2 cups confectioners’ sugar
  • 2 tablespoons finely grated lemon zest
  • 1/3 cup fresh lemon juice

Whisk all together then pour onto cooled cookies!

My little helper thought we should share the entire plate…hmmmm.
