Summer Foods: Caprese Salad

I’m pretty sure summer was invented for caprese salad…or maybe the other way around!  I’m not sure if we find ourselves more lazy in the summer months and fewer ingredients are better or the fact that this salad just makes our world go round.  There’s absolutely nothing to not like about this little dish and we love to whip it up as an easy weeknight alternative to the leafy green lettuce salad.

We go the traditional route that looks similar to this:

Ingredients are simple: fresh mozzarella, tomatoes, fresh basil, salt/pepper, olive oil.  Can it get any easier?

After a bit of research on good old Pinterest, I found that there are some interesting variations that could jazz up our dinner table.


So how do you prepare yours?  With pesto?  With balsamic drizzle? I’m thinking I’ll try option d) ALL OF THE ABOVE!
